Today is our one week mark!  What, if anything is better/worse?  For me, I'm sleeping better than I ever have, and I wake up easily when it's time.  I've noticed my complexion seems healthier.  Let us know what changes you have encountered.

I made some homemade almond butter since that stuff is so damn expensive.  Well it is freaking delicious and easy to make.  I roasted the almonds first.  To roast the almonds, spread them in a thin layer on a baking sheet at 300°F for about 20 minutes. Stir a couple of times to assure even roasting.  Using a food processor, blender, meat grinder or nut butter machine; process until the nuts are finely ground. Add the oil (i used canola) and continue processing until the almond butter reaches your desired degree of smoothness, adding more oil if necessary.  Store, tightly covered, in the refrigerator.  I just continued to add a bit of oil until I got it the way I wanted.

So I have gotten a few questions on honey.  It's debated amongst the hunter/gather folks.  Use it in moderation.  I am eating a very small amount of honey at times with my banana and almond butter.

PS I did some digging through my nutrition notes...as for heavy cream- since it’s all fat, there are none of the milk protein intolerance, lactose intolerance, or insulin-spiking issues.  Therefore, Bethany drink it guilt free (in moderation).

It's almost been a week!  Has it flown by, or seemed long?  I made a post several months ago on the topic of sleep.  Not going to get into it other than to post a link to a MUST READ book: Lights Out!  Sleep, Sugar and Survival

 

When we are sleep deprived studies show our insulin resistance(bad) is equivalent to that of a diabetic.

Today is day 4.  I'm loving reading your post's!  Bethany, yours make me laugh so hard.  Stay with it folks!!!

Chris thanks for sharing your amazing results with us.  I know for me I'm sleeping like a rock.  I haven't slept well in quite some time.  I was not getting enough, then got pretty sick and was down for a while with lots of meds freaking me out.  Then ate like crap during my recovery time.  The last 3 days I have over slept and slept like a champ.  Anyone else noticing any changes?

Day 3 is upon us.  I love the transparency everyone has been displaying.  Keep it up, this deal is SO much better if everyone continues to post updates.

I have recieved several questions on nitrates/nitrites... Many foods, especially cured meats such as bacon and hot dogs, use nitrates to preserve color and maintain microbial safety. Nitrate is harmless, but it can convert to nitrite, which can form nitrosamines, a powerful cancer-causing chemical, in your body. Whenever possible, look for nitrate-free preserved meats. When you do eat foods containing nitrates, have an orange at the same time. Vitamin C is known to inhibit the conversion to nitrosamines in your stomach. 

Please continue to ask questions, and if at all possible on this site.  Your question may help someone else too.

If you aren't doing some sort of FUNCTIONAL FITNESS then you are shorting yourself.

Look functional fitness is so easy a kid can do it...

Day one is in the books folks.  Well done!  Day 2 is upon us and I wanted to offer this up to you:  Take this thing one day at a time, better yet, one meal at a time.  28 days can seem daunting, but one meal is doable.  Keep it up.

Here is the dry rub I came up with for my brisket: sea salt, black pepper, paprika, and cummin all to taste.  This produced a paleo-tastic slab of meat.  I smoked it for an hour and a half per pound at around 200 degrees flipping it mid way.

Today is Day one of our experiment, only 29 left... A couple of things about this deal: this is not a diet, it is a way of eating.  This will be a lifestyle change for many.  It's one month folks, you CAN do this.  

I've posted a link to some recipe idea's, and will try to get some more resources up here in the coming days.  Keep it fresh and try something new, you might even like it.

Lady's be careful.  Actually eating ENOUGH of the good stuff and doing some constantly varied, functional movements, done at a high intensity might lead to results like this.  YUCK!!

Here is a good article from Melissa Byers on experimenting with eating Paleo titled CHANGE YOUR LIFE IN THIRTY DAYS.  There are several people from CrossFit OKC who are doing this.

Here is the deal:  Read Melissa's article.  Put what you are going to change for 30 days starting Monday July 13.

High Insulin and Heart Attacks

Well, I'm back after a bit of a health scare.  I will detail that soon.  Here is a very interesting article on the relationship between high insulin and heart attacks...

We have been led down a path that heart attacks are a result of high LDL cholestrol. The USDA has us believe a "healthy diet" is one that is low in cholestrol and fat and high in cereal grains. However, an article was published in the February 2009 edition of Diabetes Care stating something different. A 60 year study shows that the most important factor increasing the risk of a heart attack is not cholestrol at all, but insulin resistance - and insulin resistance is caused by eating a "healthy" carbohydrate diet, particulary if that diet also includes vegetable margarines and veggie cooking oils.
